I'm hoping Ann or one of you really good cooks might have an idea on this. . .My kids love the banana pudding that's served at a local restaurant, it's not just vanilla pudding with banana sliced in, it's smooth and slightly fluffy and banana flavored. I did a quick check of all recipes and most of what they have is that goofy vanilla wafers and sliced banana dessert made with instant pudding. Or else it's home made vanilla pudding with banana sliced in it.
I'm assuming I can puree bananas to flavor it but what do I used to keep them from turning brown? I know I need to use tapioca flour or something like that to thicken it because of the acidity in the bananas but I was hoping to find an official recipe. Any ideas?

40 NILLA Wafers, divided
2 cups cold milk
1 pkg. (4-serving size) JELL-O Banana Cream Flavor Instant Pudding & Pie Filling
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
3 bananas, sliced
COARSELY crush 30 of the wafers; set aside.
POUR milk into large bowl. Add pudding mix. Beat with wire whisk 2 minutes. Gently stir in whipped topping.
PLACE about 1 Tbsp. of the crushed wafers and 2 to 3 banana slices in each of 10 dessert dishes; top with 1/4 cup of the pudding mixture. Repeat layers. Top with remaining wafers. Refrigerate at least 1 hour or until ready to serve.
I'd skip the cookies

when i saw this post i figured it was a good place to start.
I made this as soon as i read your post!
it's RICH...it's YUMMY! my kids LOVE IT!
Creamy banana Pudding
1 (14 oz.) can condensed milk (not evaporated)
1 1/2 cups cold water
1 (4 serving size) pack of instant vanilla flavor pudding mix
2 cups (1 pint) whipping cream, whipped
36 vanilla wafers (i use however many i need)
3 med bananas, sliced and dipped in lemon juice (it disappears quicker than the bananas turning brown, so i skip this!) (i also just use however i need here)
in large mixing bowl combine condensed milk and water. Add pudding mix; beat until well blended. Chill 5 minutes. fold in whipped cream. Spoon 1 cup pudding mixture into 2 1/2 quart glass serving bowl. Top with wafers, bananas and pudding. repeat layering twice ending with pudding. chill throughly. Refrigerate leftovers.
where it says 1 cup, i pour whatever it takes to cover the previous layer.
